Umami black garlic is a unique and refined product-a harmony of flavors ranging from balsamic to licorice. In 90 g glass, the cream comes from whole bulbs of PDO Polesano white garlic expertly matured through the skills of two enterprising young biologists from Piedmont.

Garlic, after the long ripening process, turns black, acquires new fragrances and will be able to enhance any creation, from savory to sweet. It is then made into a delicious cream by adding olive oil and water, ideal for spreading or for flavoring risottos and sauces.

The precise place of origin of black garlic is not known; it is said to have originated in Korea. Certainly through the ingenuity and curiosity of chefs, it has arrived in Europe, becoming a key ingredient in the contemporary cuisine of the West.

Black garlic has also become so famous for its health properties, including a particular presence of antioxidants as well as the property of regulating blood cholesterol. In addition, precisely because of the ripening process, black garlic is extremely digestible.

Umami is a young company located between the Langhe and Roero regions specializing in the production of black garlic and black shallots, made using traditional methods and the highest quality Italian raw materials.

Research and study led 2 young biologists from Piedmont to specialize in natural food processing, exploring new tastes and flavor nuances capable of enhancing any dish.
