TERRITORY OF ORIGIN Mazara del Vallo Agro.
TERROIR Soil: medium-textured, tending to clayey. Elevation: a few meters above sea level. Climate: Mediterranean, mild winters, limited rainfall, very hot and windy summer.
WINEMAKING AND REFINING Harvest time in the second decade of September, when ripening is advanced. Cold maceration of grapes, partial fermentation interrupted by fortifi cation with wine spirits aged at least 5 years in oak barrels. Maturing in 50 and 20hl Allier oak barrels for more than 24 months.
TASTING Color: deep ruby red. Nose: extremely fruity, with notes of black cherry, pomegranate and plum. Taste: sweet, with distinct hints of red fruits, cherry, morello cherry and pomegranate.
PAIRINGS Traditional: dark chocolate with at least 70 percent cocoa. Unconventional: Castelvetrano black bread crouton, fresh tuma and mulberry jam. Nero d’avola cheeses. Serve at 12°-14°C.
