Valdibella Acamante Perricone DOC Sicilia 2018 BIO
Perricone / Sicily D.O.C. / organic farming/ ICEA certification
The myth relates that Acamantus, an Achaean warrior who was present at the time of the taking of Troy, pulls his beloved and her little son to safety from the burning city. Despite the war, he manages to make room for love and what it generates. Valdibella wanted to call Perricone this because it represents a link with the past, being among the oldest varieties grown in the area, but above all because it is a bold wine with a strong personality.

Vinification
Very late variety adapts very well in its native environment, where it achieves optimal ripeness. Grapes are harvested by hand and transported to the cellar in small baskets. They are then destemmed and the naturally fermenting must (prepared in the previous days from grapes from the same vineyard) is added. Fermentation proceeds for about 12 days at a temperature of 27°C. When finished, the pomace is separated and pressed. After malolactic fermentation, which also occurs spontaneously, the wine is aged for the winter in steel and transferred to oak barrels for one year.
Refinement
6 months in steel and 12 months in oak barrels
Organoleptic characteristics
