Valdibella Ariddu Grillo DOC Sicily 2021 organic
Ariddu is the expression of Grillo vinified in purity. Tree-trained vineyards at 500 m asl, optimal conditions for obtaining a wine of excellent freshness and great structure. Wonderful hints of wild herbs and citrus.
Grillo is a variety typical of western Sicily, especially the province of Trapani.
It is a recent grape variety since its origin is attributed in 1869 to the famous Sicilian scientist Antonio Mendola, after selecting several crosses between Catarratto and Zibibbo.

Vinification
The grapes are harvested by hand and transported to the winery in small baskets, where they are destemmed and kept in contact with the skins overnight at 8°C. The next day the grapes are crushed and the newly racked must is added with naturally fermented must, prepared in the previous days from grapes from the same vineyard.
Fermentation lasts about 20 days at a temperature of 15°C. After fermentation, the wine is aged for the winter and the following spring in steel before bottling.

Organoleptic characteristics
Color: straw yellow with golden highlights. Nose: subtle and delicate aromas with hints of grass and a light touch of citrus; Taste: a very generous, elegant, well-balanced wine with lingering sensations.
