An elegant grape variety, coming from Alsace, for 150 years it has taken up residence in the Friulian territory, finding the optimal climatic conditions to exalt all its qualities with discretion, without ever exaggerating. Difficult to manage, it loves cool areas, needs good lighting and requires a lot of care. A delicate vine, between the rows but also in the glass: the Pinot Bianco wine conquers with its finesse, like a fresh caress in the mouth, and can therefore be considered among the most elegant white wines in the world.

VARIETY

Pinot Bianco is produced in a DOC Collio vine. It is a white berried grape belonging to the French vines.

HARVEST

The grapes were hand-picked and de-stemmed on 5 and 9 September 2020.

VINIFICATION | AGING

After harvesting, the grapes are macerated for about 12 hours at a temperature of 10 ° / 12 ° C in special containers, protected from oxygen with innovative systems by recycling their own fermentation carbon, in order to reduce the contribution of antioxidants. .
The must ferments and ages on the lees for 5 months both in large 20/27 HL wooden barrels (for 40%) and in steel containers (for 60%).

BOTTLING

The wine was blended and bottled at the full moons between the end of March and July 2021.

COLOR

Pinot Bianco wine has a lively straw yellow color with golden reflections.

OLFACTORY NOTES

It is a wine with an elegant and clean aroma, persistent and of increasing intensity, with harmonious notes of cornflower in bloom, chamomile, broom, lemon peel, medlar and rennet apple, which with aging turn into hints of hay and officinal herbs dried. There are also mineral sensations.

TASTING NOTES

On the palate the Pinot Bianco is decisive and elegant at the same time. The sip is lively and fresh, rich in flavor, with delicious floral and fruity references. Consistent, structured and persistent, clean and balanced in terms of acidity and gustatory intensity. An elegant minerality also persists in the finish.

A delicate wine but easy to combine with everything: fish appetizers, white soups, poultry, eggs, non-spicy cheeses. Try it with the classic tortellini in broth.
