L’Archetipo Primitivo Aglianico 2019

Vinification: Primitivo and Aglianico are vinified separately: after mechanical crushing and destemming, the must ferments spontaneously thanks to the addition of pied de cuve containing indigenous yeasts, the only ones best able to interpret the terroir. The blending of the two wines takes place at the end of alcoholic fermentation (about 20 to 30 days, the pomace is separated through soft pressing) and before malolactic fermentation so as to ensure an optimal combination of the two grape varieties. Natural decanting without clarifiers. Unfiltered.

Aging: Steel for 24 months on fine lees where malolactic fer-mentation takes place. It is then racked into large wooden barrels for 18 months, followed by aging and resting in bottles for at least 6 months. Minimal addition of sulfur dioxide in pre-bottling.

Organoleptic characteristics: ruby red, hints of ripe and dried fruit, light notes of roasted coffee. The palate is balanced, with good tannicity and persistence.

Food pairings: excellent with traditional Apulian dishes and all structured vegetarian dishes. Try it with selection of local meats and cheeses.

Serving temperature: 15°C. Decant before serving.

Synergistic agricultural cultivation
Denomination: IGP Puglia Primitivo Aglianico.
Grape varieties: Primitivo (50%) and Aglianico (50%).
Soil type: red soil with considerable presence of siliceous-calcareous crushed stone (up to 6 m depth) followed by fissured calcareous-clay (for another 2 m); rich in humus.
Breeding form: “Free counterespalier” in honor of a book by Rudolf Steiner entitled “Philosophy of Freedom.”
Vineyard area: 4 hectares conducted with the criteria of Synergistic Agriculture and certification to organic ICEA.
Plant density per hectare: 4,545 plants per ha.
Average age of vines: 20-22 years.Yield per hectare: 60 q.li/ha.
Harvest: hand-harvested, Primitivo the first ten days of September; for Aglianico the second ten days of October
Alcohol content: 14.5 percent vol.
