Climate
The 2022 vintage was characterized by tendentially warm and dry winter and spring periods. Starting in June, which was also marked by an absence of rainfall, temperature peaks were recorded; these climatic conditions did not cause particular stress to the vines thanks to the soil and climate conditions present in the Castello della Sala vineyards. Rains in early August rebalanced the situation in the vineyard, ensuring that optimal maturity was achieved. This year’s dry weather ensured the perfect integrity and health of the grapes, allowing minimal intervention in the vineyard and giving healthy, balanced fruit with a good aromatic profile. The harvest began with Sauvignon Blanc in the third decade of August and ended with Sémillon in mid-September.
Vinification
The clusters, harvested by hand, were immediately transferred to the winery and cooled before pressing so as to preserve the characteristic varietal aromas. After soft pressing, the musts, kept for a few hours at a temperature of 10°C so as to allow natural clarification, were transferred to stainless steel tanks, where alcoholic fermentation took place at a temperature not exceeding 16°C. Once this was completed, the wine was stored at a temperature of about 10°C to prevent malolactic fermentation from taking place and to preserve the organoleptic characteristics. The two varieties were then combined so that one could “complement” the other. Fresh, vertical, slightly aromatic Sauvignon Blanc, soft and tropical Sémillon.
Historical Data
Vineyards destined for the Count of the Viper are located at an elevation of 250 to 350 meters above sea level on soil rich in marine fossil sediments. The wine is named after the first owners of Castello della Sala, and the label features a drawing of the 13th-century Chapel of St. John located on the property. The first vintage of Conte della Vipera produced was 1997.
Tasting Notes
Conte della Vipera 2022 is straw yellow in color with bright green highlights. The nose is broad and pleasant with floral, white fruit and pineapple notes that combine with pleasant citrus sensations. On the palate, a pleasant freshness gives way to a particularly long finish marked by sensations of bergamot and grapefruit.
