Canevel Terre del Faè Extra Brut Valdobbiadene DOCG Cl 75
The hillsides of the prized Faè vineyard, nestled in a unique natural setting surrounded by lush forests, produce the cru of the same name, a precious Extra Brut sparkling wine with a dry, crisp flavor and delicate aromas of vine flowers, almonds and rennet apples.

Origin
The grapes come from a 23,000-square-meter estate vineyard in the hilly area of Refrontolo, which is about 220 m asl. The vines are planted at a density of 3300 per hectare. The soil originated from the uplift of prehistoric seabed consisting of clays, sandstones and marls.
Grape varieties
100% Glera
Vinification
Of whole grapes with soft pressing and static racking for about 8 hours of the musts at 15° C. Fermentation in temperature-controlled stainless steel
(15-18°C).
Sparkling
Martinotti (or Charmat) method and Setàge Canevel protocol. Re-fermentation at low temperatures (12-14°C) and prolonged aging on fine yeast deposit. Fermentation continues until the fermentable sugar is finished.
Organoleptic notes
Brilliant straw yellow color with fine and persistent perlage. The nose is characterized by delicate and elegant aromas of vine blossom, almond and rennet apple. The lively, pleasant acidity and dry, long finish stand out in the mouth.
Pairings
In addition to being an excellent aperitif wine, it can be considered a sparkling wine for the entire meal. It goes well with flavorful fish dishes such as cod or sardines in saor.
