Vinisola A’mmare 2015 Pantelleria DOC White Cru by Campobello
A’mmare comes from a family vineyard located in Campobello di Pantelleria; a small plot bordered by low walls located about 30 meters from sea level, very close to the shoreline.
The vineyard receives what little frost, sometimes salty, from the sea that allows it to survive. Under these conditions the grapes ripen very early, in some years even at the end of July. Historically, this grape, given Zibibbo’s threefold aptitude, was sent for consumption as fresh fruit. In fact, it represented a secure income for the farmer, although the production per hectare is very low.
We selected such grapes harvested in the first half of August with already advanced ripening, vinified, and left in steel tanks for several years. The result is a wine of exceptional alcoholic power, aromatic fragrance, and incomparable flavor due to the stress in which the sapling lives. Elegant, Powerful, Unique Wine. Its deep yellow color and unmistakable bouquet make it an excellent companion wine.

Vinification:Manual harvesting of grapes in boxes, destemming, maceration at temperature
controlled at 20° for 72 hours, pressing, fermentation of clean must.
Maturation/aging: On lees with continuous batonage and static decantation in steel silos for at least 4 years. Aged in bottle for about 6 months.
Color:Color:Deep, intense yellow with golden hues
Nose:: Vinous with characteristic scent of zibibbo grapes, aromatic and persistent, warm sensations and hints of hay, herbs, tobacco.
Taste: Aromatic with almondy aftertaste, enveloping and persistent
Alcohol: 15.5 percent by Vol. (+/- 0.5 percent)
Longevity:over 10 years
Serving temperature: at 8 degrees in wide, tulip or ballon glasses that allow the aromas
To reach the nostrils as the wine oxygenates
Pairings: Aperitifs, excellent with smoked fish and creamed cod, blue and spicy cheeses, aged raw hams. Wine for companionship and cigar pairing.
