St. Michael-Eppan Chardonnay DOC Fallwind 2023

Chardonnay Fallwind DOC from St. Michael-Eppan is a white wine of exceptional finesse, produced in the best vineyards in the municipality of Eppan. This wine represents the essence of the Chardonnay variety, with a perfect balance of elegance, structure and palatability.

Sensory Characteristics:

• To the eye: Straw yellow with greenish highlights.
• Nose: Fruity aromas of melon and ripe apple, enveloping with fresh, fragrant notes.
• Palate: Velvety smooth with a delicate acid structure that enhances drinkability.

Technical Information:

• Variety: 100% Chardonnay
• Age of Vineyards: 10 to 30 years old
• Vineyards: Several vineyards in the municipality of Eppan (420-500m a.s.l.), southeast and southwest exposure. Gravel soils with limestone content and moraine deposits. Training system: Guyot.
• Harvest: Manual harvest and selection in mid/late September.

Vinification:

• Fermentation: 70% of the must ferments in steel vats, while the remaining 30% ferments in wooden barrels, with malolactic fermentation. The two wines are blended in February.

Pairing Tips:

Perfect as an aperitif or between courses. It pairs ideally with freshwater fish dishes, such as smoked trout tartare, or asparagus dishes. A versatile and refined Chardonnay, ideal for those seeking a quality food and wine experience.
