Rey Zapoteco Cuishe is a premium artisanal mezcal, masterfully produced by the second generation of the Hernández family in Matatlán, Oaxaca, Mexico. This mezcal embodies the tradition and artisanal dedication of Zapotec culture, from agave cultivation to bottling. Production Process
Rey Zapoteco’s journey begins with the careful selection and cultivation of Cuishe agaves, which reach maturity between 8 and 30 years old. Once ready, the leaves and roots are removed to leave only the pineapple-like heart, or “piña.” The piñas are cut and cooked in a natural underground oven, fueled by wood and stone, for 4-7 days. Next, the cooked agaves are ground with a horse-drawn stone, extracting the valuable juice. The juice and ground fragments ferment in wooden vats with natural yeasts, creating the “tepache,” which is then distilled twice in copper stills to ensure the purity and complexity of the product.
