De-stemming of the grapes harvested before full ripeness and maceration at 29°C for 24 hours are the first step in obtaining this refined sparkling wine. Fermentation takes place at a controlled temperature (16°-18°C) with selected yeasts, followed by aging in stainless steel tanks for 8 months during which malolactic fermentation takes place naturally. Foaming takes place in late spring, after good evolution of the base wine, and bottle re-fermentation takes two and a half months at a controlled temperature of 14°C. The bottles mature on the lees in the underground cellar for a minimum of 24-30 months. Remuage is carried out in pupitres for one and a half months. After degorgement and dosage, the wine rests for at least one month before marketing.

Description

Murgo Brut Rosato Spumante 2022 is made from Nerello Mascalese grapes harvested before full ripeness. Short maceration in pneumatic presses and temperature-controlled fermentation in stainless steel tanks give this sparkling wine a unique finesse and complexity. Aging on yeasts for between 2.5 and 3 years gives the wine a fine, continuous perlage, with a bouquet of delicate hints of Etna raspberry and cherries, hazelnut and yeast.
