EXPOSURE OF THE VINEYARDS: Toward the north – west at 150 – 200 meters above sea level in the commune of Provaglio d’Iseo
SOIL ORIGIN AND COMPOSITION: Lombardy flint rich in calcareous marl.
YIELD PER HECTARE: 80 quintals
HARVEST: Manual in small crates with grape selection in the vineyard
HARVESTING TIME: From the third decade of August.
WINEMAKING: From the vineyard, the Chardonnay boxes are placed in a refrigeration cell that has a temperature of 4°C, for the duration of 24 to 36 hours. The grapes thus cool down and reach a temperature of 10°C. This process promotes better extraction of varietal aromas. Cooled grapes are taken to the press for soft pressing of whole clusters, from which no more than 50 percent of the flower must is extracted. Fermentation then takes place at a temperature of 15 to 16°C, and resting on the yeasts continues until blending. Small percentages of the wine that has fermented in second- and third-passage barriques contribute to the draught cuvée

GASTRONOMIC PAIRING: Ideal as an aperitif, at the table it goes well with fish dishes, white meats and medium-aged cheeses
