Production Process
This mezcal is made following the ancestral tradition typical of Santa Catarina Minas. Espadín agaves are cooked in wood-fired underground ovens, ground by hand with wooden mallets and fermented naturally in stone vats. Distillation takes place in clay stills, a rare and complex technique that gives the mezcal a unique flavor profile and silky texture.
