The agaves are harvested by hand, ensuring the highest quality and maturity of the plants to guarantee an authentic and deep flavor. - Artisanal Processing: Agave processing begins with splitting the hearts of the plants (piñas) through the use of traditional axes.
Next, the piñas are cooked in underground ovens, an ancient method that uses heated stones and oak wood for a less smoky but still intense flavor profile.
The cooking process takes five days, during which time the agave absorbs the heat and flavors of the earth. - Fermentation and Natural Distillation: After cooking, the agave is crushed by hand using a horse-drawn tahona, an ancient technique that preserves the integrity of the natural flavors.
