• Production area: Monte Sant’Urbano property, Fumane (Verona).
• Altitude: 280-350 m above sea level.
• Vineyard age: High, ideal for superior aromatic concentration.

• Corvina Veronese and Corvinone: 70%.
• Rondinella: 25%.
• Molinara: 5%.

Production process

• Withering: Manual selection of the best bunches and withering for about 100 days, with a 40% weight reduction.
• Vinification: Gentle crushing, followed by a long fermentation with maceration to extract maximum aroma and structure.

Refinement

• In wood: 24 months in 500-l French oak tonneaux followed by 18 months in large Slavonian oak barrels.
• In bottle: 12 months for further harmonization.
