Characteristics
VINEYARD: of 20 hectares called “Bellevigne” in the village of Malaville, in the heart of Grande Champagne, one of Cognac’s finest terroirs.
DISTILLATION: eaux-de-vie were distilled in a small still, according to a special method with a very slow flow. This longer and slower process during this second stage of distillation gives the eaux-de-vie rich fruity notes.
Vinification:
AGING: in a 350-liter “red” oak barrel from the forests of Limousin. “Red” is the part within the stem that has taken on the red hue that has the distinction of preserving the original typicality and elegance of Cognacs.
BOTTE: It was housed in one of the House’s smaller wine cellars, located in the former Maison du Prieur de Jarnac. This cellar has become the House’s icon with its 13th-century vaulted crypt. Its south-facing facade has two small, narrow pointed windows that filter light while the thick stone and limestone walls, typical of the Grande Champagne region, help regulate temperature and humidity.
