The Jolivet family has been active in the wine world since 1926, when it started its business as a négociant. It will be necessary to wait until 1987 and the arrival of Pascal Jolivet to see the birth of the wines that bear his name. Pascal Jolivet immediately established himself as a dynamic and revolutionary exponent having decided to vinify exclusively his Sauvignon Blanc with indigenous yeasts to better express the typical varietal characteristics. In a short time, Pascal Jolivet wines established themselves on the international wine scene for their outstanding quality. Today Pascal Jolivet’s company covers an area of 95 hectares in the villages of Sancerre and Pouilly Fumé and 50 hectares in the Touraine area for the production of Attitude wine. Since 2013 Pascal Jolivet has availed himself in the cellar of the help of a young and talented oenologist of Friulian origin, Valentina Buoso, an expert in vinification with indigenous yeasts and, with equal competence, in the processing of Sauvignon Blanc. Pascal Jolivet’s company continues to work in the cellar in an extremely natural way, with very long fermentations and sur lies refinements that play a fundamental role in the concentration and complexity of the wines, characterizing them for purity and elegance.
