The Sparkling Blanc de Blancs Pas Dosé 100 Months by Alessandro Viola is a masterpiece of elegance and authenticity, the result of long refinement and a natural and earth-friendly production philosophy. Produced in Alcamo, in the heart of western Sicily, this classic method is made from 100% Catarratto grapes, grown organically in the vineyards of Contrada Fastuchera, on calcareous soils that give the wine a marked minerality and unique freshness.

✨ Classic method and exceptional aging

After an initial spontaneous fermentation in steel (90%) and French oak barrels (10%), the wine rests for over 100 months on the yeasts in the bottle, developing complexity, finesse, and aromatic depth.
Disgorgement is done manually, without adding sugar: a pure “Pas Dosé”, where every bubble speaks of the sincerity of the grape variety and the terroir.

👃 Aroma and flavor

The nose opens with notes of white flowers, fresh almond, Mediterranean herbs and a hint of bread crust. On the palate, it is taut, mineral, and vibrant, with a fine, persistent perlage that accompanies a long, saline finish.
