Calabretta Piedefranco Red Wine 2021
Calabretta Piedefranco 2021 is the winery’s new flagship, resulting from a rigorous process of mass selection and exclusive use of the Piedefranco grape variety, grown in a particular area of the vineyard considered extraordinary for its quality.
Vineyard Characteristics:
- Soil: The soil is volcanic sandy in nature, characterized by a rich presence of stones.
- Extent: The vineyard covers an area of 0.3 hectares.
- Planting Type: The vines are espalier-grown.
- Density of Plants: The density of vines per hectare is 6,250, ensuring a controlled and high-quality yield.
- Average Age of Vines: The vines have an average age of 15 years.
- Average Production: The average production per hectare is 25 hectoliters.
Vinification and Aging Process:
- Vinification: Grapes are destemmed and crushed, then spontaneously fermented with prolonged maceration on the skins for 5 days in stainless steel tanks. During this process, frequent pumping over and fulling are carried out to best extract the desired components.
- Aging: After fermentation, the wine is aged in used barrels for a period of 10 months, adding complexity and depth to the final product.
- Total Sulfur: The total sulfur level is 40 mg/l.
- Limited Production: Only 720 bottles of this wine were produced, giving an exclusive and unique character to each bottle.
