General Features:

The wines in this cuvée come from Pinot Noir and Chardonnay grapes grown in high hillside vineyards around Trento and on the Brentonico plateau, between 450 and 600 meters above sea level, with southern and southwestern exposure. Chardonnay grows on limestone fluvioglacial soils, while Pinot Noir is grown on basaltic volcanic soils of the Brentonico plateau.

Grape varieties: Cuvée of Pinot Noir and Chardonnay

Vinification and Aging: Grapes are harvested by hand and brought to the winery in crates. Chardonnay is slowly pressed to separate the different fractions of must that ferment at controlled temperature in stainless steel. Pinot Noir is fermented by the “submerged cap” method, keeping the must in contact with the skins until fermentation begins, and then continuing in stainless steel. After the wine is bottled, it remains on the lees for at least 15 months. A dosage of “liqueur d’expédition” is added at disgorgement.
