On the Mountain:

The vineyard is located in Contrada Calderara Sottana, on the northern slope of Etna, in the municipality of Randazzo (CT), at almost 700 meters above sea level. This unique terroir, with its stony, volcanic soil rich in minerals and “ripiddu” (pumice skeleton), gives the wine extraordinary complexity.

• Soil: stony, volcanic, rich in organic matter and minerals, sub-acidic reaction
• Viticulture: Vines about 50 years old, grown as espalier, spurred cordon
• Planting Density: Approximately 6,500 vines per hectare
• Yield: About 6,000 kg/ha
• Climate: Mountain, humid, good rainfall in cold season, good ventilation

Vinification and Aging:

• Harvest: Manual in mid-October
• Fermentation: In temperature-controlled stainless steel with 21-day maceration, using indigenous yeasts
• Maturation: 12 months in French oak tonneaux, then in steel
• Aging: 10 months in bottle
