VINIFICATION:
Manual harvest with sorting on sorting table. Cold maceration for 60 hours in open oak vats. Spontaneous alcoholic fermentation. Malolactic fermentation avoided.
TASTING:
The goal during the creation of this new vintage was to develop a different, more airy rosé champagne.
The delicacy of the nose will reveal notes of rose petals, violets and a hint of grenadine. On the palate, surprising minerality lets aromas of tangerine peel and pink grapefruit emerge. All enhanced by superb bitterness and a very pleasant fresh finish.
AGREEMENTS:
This Blanc de Rose was born for the aperitif. But it will find a place of choice alongside raw fish, such as a lightly marinated carpaccio of salmon and halibut or simply a sashimi of bluefin tuna.
