VINIFICATION:
Manual harvest with sorting on sorting table. Cold maceration for 78 hours in open oak vats. Spontaneous alcoholic fermentation. Malolactic fermentation avoided.
TASTING:
The ruby red hue of this Rosé de Saignée is, first and foremost, a treat for the eyes. The nose of this Champagne is a bouquet of spring. Rose, wild strawberry, raspberry and later blackberry harmonize perfectly to offer the taster aromas unexpected in a usual Rosé Champagne. The palate is a continuation of the nose, with the structure of Pinot Noir leaving a convincing vinosity on the finish. Because of its freshness, this Champagne Rosé de Saignée should be enjoyed young to benefit fully from these crisp, fresh red fruit aromas.
