Bollinger R.D. 2007 Champagne is an extraordinary expression of Bollinger’s winemaking art. With a composition of Pinot Noir and Chardonnay from prestigious crus, this champagne offers a fresh and complex bouquet with notes of citrus, sweet spices and a hint of ripe fruit. In the mouth, it surprises with an almost balsamic freshness and a perfect balance of citrus, minerality and a delicate savoriness. Aged for over 10 years on the lees, it represents the pinnacle of quality and elegance, ideal for celebrating unforgettable moments.

Cellar:

Vinification: Fermentation takes place in small wooden barrels (of 205, 225 and 410 liters), followed by frothing and a maturation on the lees for at least 10 years, three times the time required by the product specification. Maturation takes place with the bottle sealed with a cork, ensuring an ideal oxidoreductive process for yeast autolysis.
Aging: Aged on the lees for at least 10 years, three times the time required by the product specification. Recent disgorgement to ensure wine freshness.

Tasting Notes:

Color: Golden hues, with a fine and very lively perlage.
Nose: Fresh, elegant and complex, with notes of citrus, baking, sweet spices, minerality and a nuance between smoky, toasted and ripe fruit.
Pairings: Ideal with large roast meats, baked quail and pigeon, and very mature cheeses.
Taste: Surprising freshness, almost balsamic, with a harmonious sip that reflects the olfactory sensations. A perfect balance of citrus, minerality and a refined savoriness on the close.
Tasting Notes: R.D. stands for Récemment Dégorgé. Madame Bollinger created this legendary cuvée in 1967, characterized by prolonged aging on the lees. Only the best vintages become R.D., whose dégorgement occurs only when they leave the cellar. Full-bodied, intense and balanced, it is a great wine.
