Malvasia passita is a story of the Aeolian islands, a wine that was royalty throughout Europe until the early 1900s. However, phylloxera, emigration and wars threatened to lose track of this precious wine. The grapes, harvested at the right ripeness, are placed to dry in the warm Mediterranean sun of September on traditional cannizzi (trellises) for about 15-20 days. After vinification, without the addition of yeast, the Malvasia is aged partly in steel and partly in oak for six months, then rests just as long in the bottle.
