Fascinating combination of Sauvignon Blanc, Grechetto, Traminer, Sémillon and Riesling grapes and the unique terroir of Castello della Sala. The clusters, brushed by the morning mists and favored by the special microclimate, indulge in the Noble Mold, Botrytis Cinerea, which reduces their water content, concentrating their sugars and giving Muffato its characteristic aromas.

Vinification
The grapes come from the Castello della Sala vineyards, located between 200 and 450 meters above sea level on clay soils rich in marine fossils. The grapes were harvested manually by returning to the same vineyard several times depending on the state of the grapes. After transfer to the winery, the clusters were further sorted on a sorting belt. A light crushing without destemming followed. After pressing, the must fermented for 18 days at a temperature of about 17 °C. The resulting wine, still sweet, was transferred to French oak barrels (Alliers & Tronçais) where it matured for about 6 months before continuing aging in steel for an additional 2 years.
Historical Data
Muffato della Sala is made from botrytised grapes harvested in late October-early November, to allow the morning mists to encourage the development of Botrytis Cinerea or “noble rot” on the grapes. This mold reduces the water content of the grape and concentrates its sugars and flavors, giving Muffato della Sala a harmonious and unmistakable taste. The first vintage was 1987 and consisted of varieties such as Sauvignon Blanc (50%), Grechetto (30%) and Drupeggio (20%). Subsequently, the composition varied to the present one. Muffato della Sala is a fascinating wine, an expression of a unique terroir, with very limited quantities.
Tasting Notes
Muffato della Sala has a bright and intense golden yellow color. The nose is delicate and elegant: ripe fruit sensations dominate, such as apricot, peach and citrus aromas accompanied by floral hints and distinct iodine notes. The palate confirms and enhances what was already perceived on the nose: the extraordinary balance between freshness and sweetness gives a long aftertaste on the finish.
