Masataka Taketsuru, the father of Japanese whiskey, is the founder of the Nikka Company, famous for its two distilleries Yoichi and Miyagikyo. The Miyagikyo distillery dates back to 1969 and is located near Sendai. Clean air, hot springs, the right humidity for aging wood, and pure water bubbling up from underground; these are the determining factors for this choice. Miyagikyo is home to two different types of stills: Scottish-style pot still with an ascending swan neck, to obtain a softer, lighter, fruitier distillate; and a 1960s-era Coffey double column imported from Scotland.
