The primary goal is to seek the highest quality while preserving the authenticity of the grape variety and terroir. Vinification
Winemaking at Roagna is marked by tradition. The grapes are fermented in large wooden vats for long periods, allowing the native yeasts to fully express their characteristics. Fermentation lasts for 8-10 days, followed by a maceration phase that, in the best vintages, can last up to 70 days, ensuring total tannin extraction and structural complexity of the wine. Collaboration with the Faculty of Viticulture and Enology in Turin helps to achieve optimal selection of native yeasts.

The Land
The tertiary soil is characterized by a composition rich in microelements and a fine grain size, reflected in the elegant and complex wines produced by Roagna. The presence of very old vineyards, with vines planted in the period from 1937 to 1955, gives the wines low production and high quality.
