Origins & Terroir

The name “Crichët” refers to the upper part of a small hill, a privileged location for Nebbiolo cultivation, boasting optimal sun exposure and natural wind protection. “Pajé” designates the original vineyard, a micro-parcel within the larger Pajé area, distinguished by its white limestone marl and high active limestone content. This unique 0.5-hectare site offers a distinctive soil and microclimate that shape the wine’s unmistakable character.

Winemaking Process

Patience and precision define the Crichët Pajé production. The grapes are hand-harvested in October, only when they reach perfect physiological ripeness. After two meticulous manual selections, they undergo fermentation in wooden vats with native yeasts. The fermentation lasts approximately 10 days, followed by the traditional cap-submerged maceration technique (steccatura), which extends for 80 to 90 days. The wine is then aged in neutral oak barrels for several years before being released—only after at least a decade of maturation.

Limited & Exclusive Production

Crichët Pajé is produced in extremely limited quantities, with yearly production rarely exceeding 1,000 bottles and, in some vintages, just over 2,000. Each bottle is individually numbered, highlighting the winery’s dedication to craftsmanship and excellence.
