Amargo Chuncho, or Chuncho Bitters, is named after the ethnic group of Amazonian Indians who proudly fought and resisted the Spanish conquerors.
It is the quintessential Peruvian bitter and is considered an indispensable ingredient in the preparation of Pisco Sour.
Chuncho is a complex and well-balanced combination of more than 30 different Peruvian forest peels, herbs, roots, barks and flowers, including Quina and Sarrapia leaves (both depicted on the Peruvian flag), which are macerated and left to age for a period of six months in oak barrels before the product is bottled. The most common use is in the preparation of cocktails and long drinks, however, it can also be used in cooking or baking to impart flavor to meat, fish or desserts.
Although it is used in drops, it gives cocktails and long drinks a unique and distinctive flavor that makes it an essential ingredient in any bar.
