“IN DER EBEN” Sauvignon Blanc is produced by the biodynamic method from porphyritic soils.

• Soil origin: Soils of volcanic origin, specifically lean, stony porphyry.

• Agricultural practices: Organic farming since 1990, certified biodynamic since 2014.
• Vinification: Fermentation is spontaneous in large wooden barrels. About 30 percent of the wine ferments with skins and stems. It then undergoes malolactic fermentation and aging in large oak barrels.
