Production Area, Altimetry and Soils:
- East Slope: The grapes are grown at 900 meters above sea level in the municipality of Sant’Alfio, on soils rich in volcanic sands and ash, influenced by the Ionian Sea, which makes this area the wettest in Sicily.
- North Slope: The grapes come from vineyards located a few dozen meters from the Alcantara River, in the municipality of Castiglione di Sicilia, on soils characterized by calcareous clay and a unique microclimate created by the river.
Vineyard Cultivation:
- North Slope: Vineyards planted in 2019, raised using the traditional Etnean Alberello system.
- East slope: Vineyards planted in 2012, trained with the spurred cordon system and pruned to Guyot.
Vinification: Grapes are harvested in the early morning hours and transported to the winery in small 10 kg crates. After destemming, the grapes are immediately softly crushed. After 48 hours of decanting, the must ferments in temperature-controlled steel tanks.
Aging: The wine ages for six months on fine lees, partly in steel tanks and partly in cement. It then ages an additional six months in the bottle.
Tasting Notes:
- Color: Brilliant straw yellow.
- Nose: Intense and complex, with notes of white-fleshed fruit, citrus and delicate floral nuances.
- Taste: Fresh and mineral, with good acidity and a long, lingering finish.
Pairings: Perfect with fish dishes, shellfish, fresh cheeses and light appetizers.
